Servings: 2-4

Salad Ingredients:
  • 1 pound kale, or other hearty greens, rough chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon kosher salt (Diamond brand)
Vinaigrette Ingredients:
  • 3 cups extra virgin olive oil
  • 1 tablespoon good-quality red wine vinegar
  • 1/2 cup lemon juice
  • 1 teaspoon kosher salt (Diamond brand)
  • 2 tablespoon maple syrup 
Garnish:
  • Mix of fresh herbs (cilantro, dill, flat-leaf parsley, nasturtium, etc.)
  • Toasted seeds
  • Thinly shaved radishes 
Instructions:

For the salad, massage the salt and lemon juice into the greens. 

To make the vinaigrette, place all the ingredients in the Vitamix. Blend for 30 seconds. Store in a mason jar in the fridge. 

To serve the salad, drizzle the vinaigrette over the macerated greens. Garnish the salad with toasted seeds, radish and herbs.
