Ingredients
  • 1 cup brown rice
  • 1 cup buckwheat groats
  • 2 tsp apple cider vinegar
  • 1 banana
  • 1/2 cup or more of water
  • 1/4 tsp baking soda
Optional:
  • 1 tsp vanilla
  • 1/2 tsp cardamom seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp orange zest
Instructions:

Soak the rice and buckwheat groats with apple cider vinegar in 5 cups of water overnight. In the morning, rinse and place in a high speed blender with all other ingredients and blend on high speed till a batter, (slightly thinner than pancake batter) forms. Heat your waffle iron and spray or brush with olive oil once heated.  Add enough waffle batter to cover the waffle iron thinly.  Close it and let cook for 3 to 4 minutes and open it gently to see if the waffles have browned and are crispy. If not, let it sit a bit longer. Top with organic maple syrup, fresh fruit or coconut chai pudding. Enjoy!
